Grain Free Cereal

 As I've shared before, finding grain free breakfast cereal has been one of our biggest challenges.   Spunky Coconut's Vanilla Almond Strawberry Granola has been a blessing.  Kelly has no idea of how grateful we are. (Thank you very much Kelly!!) We have varied the recipe a little and changed the name.



Almond/Walnut Granola.
Soak 2 cups of walnuts & 1.5 cups chopped almonds for about 8 hours.
Rinse and strain.
Add :
1 cup shredded coconut
1/2 cup almond flour
1 cup applesauce
1 tsp of honey
1/4 cup sugar
1 tbsp vanilla extract
1 tsp cinnamon
twist sea salt

Dehydrate overnight, until dry and crunchy.
Top with tinned peaches
Serve with goat's milk.

Wow that sounds delicious and simple. I am not looking for grain free dishes, but i do like simple nutritious and tasty ones.

You do sound a lot like us :)
We are a homeschooling family of 8 (so far 6 little ones). I have had a struggling with my weight for about 7 years now - nothing I have done has made a difference. We have been raw vegan and are now looking into Paleo, I have become an herblist to try and "fix" myself but so far nothing has worked. So I had a question (or 5) for you...
First - I am having trouble with breakfast the most - we have a farm and need to be done with breakfast quickly. I used to make big batches of granola over the weekend and feed it during the week - that included rolled oats of course (which my very naturally minded doctor has told me that oats do have gluten - he says that is why they are so sticky..). What I have trouble finding is a recipe big enough for my family - any paleo granola recipes out there serve 2-4 people for a couple days. I need enough to serve 5 very hungry kiddos (the animals eat breakfast before we do - so they are hungry) that I can make a big batch of over the weekend.. Have you found anything like that yet? What I really need is a cookbook done by the mama of a large family.. one that also understands that we are all here during lunch too and eating shrimp soup is just not really possible with all the prep work involved.
Ok - and lunch is usually a sandwich (on homemade or Ezekial bread) and fruit - we have been health nuts for a long while now and all chips, packaged food, etc.. has been long gone :)
And how about any BIG crockpot meals without grains?

Ok - I am off for now - only have limited computer time. There is a neat blog called "Everyday Paleo" - she is mama to 3 boys and does make larger portions, but she is also able to work out for hours a day (she is a trainer) and make exotic lunchs that homeschooling mommies just dont have time to do...

I'm still struggling to find the answer in the breakfast area myself, but stay tuned;)
As for lunches I am making progress in that area at last! slow cooker meals, I'll try to write a post for you soon.
